 Tasting Notes: 

Juicy tropical fruit upfront with loads of melon, guava and pineapple, followed by nutty milk chocolate. Sweet, round and full-bodied with well-balanced acidity.

 

Perfectly ripe, intact coffee cherries are washed with fresh water before being sealed in an airtight vessel where they undergo anaerobic (without oxygen) fermentation for 72 hours. The naturally occurring yeast and bacteria present in the coffee cherries consume some of the sugars in the pulp of the cherries, much like the winemaking process. Afterwards, the coffee cherries are spread out on African raised drying beds in a climate-controlled greenhouse and turned every 2 hours until they reach 10% moisture.

The whole process takes 20 days and yields coffee with enhanced fruity acids and aromatic properties.
